Black Bean Soup

1 # dried black beans

1 qt chicken stock

1 # Ham chunks

1-2 chopped onions

2 celery ribs, chopped

1 28 oz can diced tomatoes

2 cloves garlic

2-3 chile serranoes, seeded

Bring to a boil, reduce heat to medium low, cover. Cook 3-4 hours, checking for liquid. If it gets too dry,add more chicken stock. When it is done, check for salt and pepper to taste. It is really better refrigerated and served the next day. This makes enough for 8-10 servings. or, it can be frozen in smaller servings.
