2 T olive oil
1 large chopped onion
2 cloves garlic, chopped
6 T curry powder
2 t coriander
14/t cayenne
1 15 oz can tomato sauce
1 28 oz can diced tomatoes
5 c chicken stock
1/2 c chunky peanut butter
1 # diced cooked chicken
salt, pepper to taste
Saute onion and garlic in oil. Add spices, make a paste and brown. Add stock, peanut butter and tomatoes. Cover and simmer over low heat 1 hour. Add chicken, simmer 30 minutes. Garnish with chapped peanuts and cilantro.
